Gochujang Stew is Just What You Need for Dinner on a Hump Day

Gochujang (고추장) and Korean food are inseparable. It's a red chili paste that is savory, sweet, and spicy. Gochujang is made from fermentation process and has many health and dietary benefits. Plenty of protein and vitamin B2 and C! There are plenty of Korean dishes that include Gochujang, and the Gochujang stew (고추장찌개) is one of my favorites. You can throw in left-over ingredients in the stew and they will only make the stew more delicious! So be creative as you recreate Baek's recipe.
Ingredients
Sesame oil - 2 TBSP
Regular cooking oil - 2 TBSP
Gochujang - 1 heaping TBSP
Korean chili pepper powder (고춧가루) - 2 TBSP
Water - 2 cups
Potatoes - 1 large potato, diced into approximately 1/4-inch pieces
Meat - any kind - approximately 1 heaping cup
Minced garlic - 1 TBSP
"Soup" soy sauce (국간장) - 5 TBSP
Fish sauce (액젓) - any kind - 1 TBSP
Oyster mushroom (느타리버섯) - 2 cups
Onion - 1/2 of an onion, sliced
Green onion - 1 bunch, chopped
Optional - Korean chili peppers (청양고추) - 2 or 3, thinly chopped
Recipe
In a large pot, add 2 TBSP of sesame oil and 2 TBSP of regular cooking oil (any kind)
Add 1 heaping TBSP of Gochujang
Add 1 TBSP of Korean chili pepper powder (고춧가루)
Add 2 cups of water
Add potatoes
Add 1 more TBSP of Korean chili pepper powder (고춧가루)
Add approximately 1 heaping cup of meat (spam, brisket, pork belly, left-over KBBQ meat, anything!)
Pro-tip: Add more of less amounts of meat, or add more than one kind of meat as you prefer -- be creative!
Bring the pot to a boil
Add 1 TBSP of minced garlic
Add 5 TBSP of "soup" soy sauce (국간장)
Add 1 TBSP of fish sauce (액젓), any kind
Add 2 cups of oyster mushroom
Add onion
Add green onion
Optional: Add Korean chili peppers (청양고추)
Bring the pot to a second boil
That's it! Enjoy the stew over a bowl of steamed rice and other side dishes. I have a feeling you will be asking for seconds!
