"Anchovy stir-fry" sounds awkward but it's arguably one of the most popular side dishes that you will find in Korean restaurants. Its salty-and-sweet taste goes very well with a bowl of plain rice, so you can easily have a full meal with just this side dish (or so I often enjoyed it when I was young). I made this a few weeks ago and I ended up eating a bit too much for dinner, but hey, that's the magic of Baek Jong-won's recipes, right? :)
Ingredients
Dried anchovy - approximately 2 cups
Sugar - 2 TBSP
Green onion - 1/2 cup
Prep
Put dried anchovy through a sieve, filtering out any residual parts
Finely chop green onion
Stir-fry
Place a pan on a medium-low heat
Add dried anchovy and stir-fry for approximately 2 minutes (this will remove the fishy smell)
Add green onion
Add sugar
Stir-fry for another 3-4 minutes until ingredients are well mixed
That's it! Isn't it super simple? Keep dried anchovy in the freezer and remake this side dish easily any time :)
