"Anchovy stir-fry" sounds awkward but it's arguably one of the most popular side dishes that you will find in Korean restaurants. Its salty-and-sweet taste goes very well with a bowl of plain rice, so you can easily have a full meal with just this side dish (or so I often enjoyed it when I was young). I made this a few weeks ago and I ended up eating a bit too much for dinner, but hey, that's the magic of Baek Jong-won's recipes, right? :)

  1. Ingredients

  • Dried anchovy - approximately 2 cups

  • Sugar - 2 TBSP

  • Green onion - 1/2 cup

  1. Prep

  • Put dried anchovy through a sieve, filtering out any residual parts

  • Finely chop green onion

  1. Stir-fry

  • Place a pan on a medium-low heat

  • Add dried anchovy and stir-fry for approximately 2 minutes (this will remove the fishy smell)

  • Add green onion

  • Add sugar

  • Stir-fry for another 3-4 minutes until ingredients are well mixed

That's it! Isn't it super simple? Keep dried anchovy in the freezer and remake this side dish easily any time :)
