A Can of Tuna & Leftover Veggies = Mini Tuna Pancakes You'll Love!

동그랑땡, aka mini Korean pancakes, is one of the main Korean holiday food items that I grew up watching my mom and grandma make. It's so filling and full of flavors. However, I remember the kitchen always being a mess with all that flour and egg coating that went into preparing the hundreds of these mini doughs of goodness.
Thankfully, Baek Jong-won has broken down the science of this concoction into a few simple steps! The most amount of prep goes into chopping the veggies. Other than that, it's as simple as mixing & pan-frying! :)
Ingredients
Carrot - ⅓ of a regular sized carrot
Onion - ½ of a regular sized onion
Green onion - 1 bunch of thin (regular-size) green onion
Canned tuna - 1 can
Eggs - 2
Fish sauce - 1 TBSP
Salt - ⅓ TBSP
Sugar - ⅓ TBSP
Garlic - ½ TBSP
Korean pancake mix flour (부침가루) - 4 heaping TBSP (regular flour is ok if you don't have the Korean pancake mix flour)
A little bit of oil for pan-frying
Recipe
Prep vegetables
Finely chop carrot, onion and green onion
Mince garlic
Mix ingredients in a mixing bowl
Add carrot, onion, green onion into a mixing bowl
Add minced garlic
Add salt
Add fish sauce
Add sugar
Mix well
Crack 2 eggs into the mixing bowl and stir well
Add 4 heaping tablespoons of flour (Korean pancake flour or just regular flour) into the mixing bowl then stir well
Pan-fry
Heat up the pan; add oil
Scoop 1 ice-cream spoon full of the batter into the pan
Pan-fry till each side is browned (you can make it soft or crispy depending on your preference)
That's it! You can serve this plain or with soy sauce (or other favorite dipping sauce of your choice) as a delicious appetizer, a snack, or a side-item item.
Extras:
You can substitute tuna with salmon, ground pork, or other protein as you wish. If using raw meat, ensure that you cook the meat thoroughly when pan-frying.
Optionally, you can add ½ cup of cooked rice into the mixing bowl (cold rice that’s been sitting in the fridge is fine) if you want to make a slightly different version that can be eaten as a more filling meal-substitute. This variation super portable so perfect for a meal on the go -- like a waffle! :)
